Fasting recipe – Baked potatoes with vegetables and mustard

 width=We are in the period of Easter fasting – before the Resurrection of the Lord, which is the longest and harshest of the four long-term fasts of the Orthodox Church.

Fasting means that during this period you don’t eat anything of animal origin. No meat, no milk, cheese, eggs, not even fish, and obviously all fish derivatives, such as seafood (except for the days when we have the permission to eat fish).

We will not go too much into details that can give rise to serious debates regarding the religious reasons or health reasons that determine people to fast. We are just saying that fasting does NOT refer only to the food part. You must have an open heart, do good, help those around you if you can, repent for your sins and try to become better, to get closer to God.

Today we will talk about how simple and easy it is to cook for fasting.

And we will cook a Greek recipe: Baked potatoes with vegetables and mustard

It is a mega simple and mega delicious recipe.

The ingredients we need for 4 servings are the following:

  • Potatoes 1 kg (preferably red – the white ones can crumble)
  • Olive oil
  • Mustard (you can use according to your preferences, sweet, hot, Dijon, etc.) – 2 tablespoons
  • Garlic – 1 head
  • Onion – 1 piece
  • Salt, pepper – to taste
  • Rosemary – 1 sprig, mandatory fresh (if you use the one from the envelope, it will not have the same taste).

While we peel the potatoes, heat the oven at 180 degrees.

Wash the peeled potatoes and cut them lengthwise into 4 and let them drain.

In the meantime, prepare the garlic, peeled, cut, crushed or rubbed until a paste is made, we add salt, pepper, mustard until it is homogenized and a mustard paste results.

In the oven tray, put a sheet of baking paper.

We place the potatoes on top of which we put the mustard paste, the sprig of rosemary and the onion cut into quarters and placed in the corners of the tray.

We put the pan in the oven. The baking time differs depending on the performance of each individual oven. Let’s say 45 minutes.

It would be preferable to turn them from time to time with a spatula, so that they brown on all sides.

 width=Bonus! You can add the juice of a lemon to the mustard paste before pouring it over the potatoes.

You can serve them as a main course or side dish.
