Perfect dessert – cheese pancakes with sour cherry jam

 width=Why sour cherry jam?

Because it is the perfect combination, because it is as if you order Grilled meat balls without mustard and a cold beer or bors soup with no lovage.
Of course the choice is up to the jam consumer (sure there is someone who prefers blueberry or strawberry jam), but is sour cherry jam is on top.

The cheese pancakes with jam is the kind of dessert that is most ordered in most restaurants, including here at Alpin.

Doing a little survey over time, we found that people avoid preparing it at home thinking that is too complicated or if they cook it, don’t do it correctly. Not to be confused with a simple donut. Even the ingredients are different.

Here is a simple and correct recipe.

You need these INGREDIENTS:
• 500 g fresh cottage cheese
• 200 g flour
• 2 eggs
• 100 g sugar
• 1 teaspoon of baking soda
• Zest of 1 lemon
• 1 teaspoon lemon juice
• A pinch of salt
• A sachet of vanilla sugar
• 2 tablespoons of crumbs
• Sour
• Jam
• Oil for frying

These ingredients are for 10 pieces.

In a bowl mix: cheese, sugar, baking soda off with a teaspoon of lemon juice. Then add eggs, pinch of salt, lemon peel, vanilla sugar and crumbs. Finally put flour, in order to avoid lumps forming. The crumb is to aerate texture composition.
Mix well. How do we know that is perfect dough? It should not stick to your fingers, but not too hard either. If it sticks to the fingers, more add 1 or 2 tablespoons of flour.

 width=You will get very good modeling dough which we will divide into 10 parts. Or … more. How many we want. Their size is neither standard nor compulsory.

We form balls of dough, enough to be the size of a billiard ball. With forefinger form a hole in the middle ball.
If you are not skilful enough, you can make the dough a countertop thickness of 2 fingers that you can pierce with a larger jar. At least it will be all equal!
Of remaining dough balls form a equal number of small donuts.

 width= width=After finishing operation portion, we pour some flour over the pieces and shake them off.

Place the frying pan on the stove to heat the oil.
Be carefull!!!!!

If oil is not hot enough, the pancakes will be soaked in oil.
If the oil is too hot, they will not fry inside.
The optimum temperature is 140 degrees.

 width=Fry the pancakes on both sides over medium heat until crisp. NOT high heat!
As we take them out of the frying pan we place them on a paper towel to absorb the excess oil.

 width=Then fry the mini donuts.

On a large plate we place 2 pieces on which we pour lots of cream, place the mini donut and the sour cherry jam.
