Culinary magic of Tara Barsei
We begin today a series of articles about Tara Barsei, about traditional food, and why not, about the legends related to this region.
It seems that sometimes we need to see a documentary on TV or Internet to realize that we are not paying enough attention to the places we visit. We don’t realize that we have around us a corner of paradise. This is exactly what happens with Tara Barsei, a great place that is almost lost in history.
History page on Tara Barsei
Over 500 years ago, those who went through „Little Transylvania” called these lands Tara Barsei. Where does this name come from? The name comes from Barsa river which splits the region from one end to the other. In fact, this is only one theory about the origin of the name, theory that gave rise to many contoverse among historians, and even among the locals.
But the most popular version is the one that says that the name comes from the word Buzenland „wurzel” – root.
How does Tara Barsei look like?
The area is fortified by mountains full of forests and the interior is blessed with a rich plain, with meadows full of wonderful scents. We all want to go in several known European regions, places full of charm, but we forget that Tara Barsei can compete with them anytime, without blushing. Transylvania is a miniature, full of magic, ethnic origins and Eastern and Western culture, Tara Barsei being at the intersection of these two worlds.
After presenting you a little of the magic of this region, we will make you a culinary surprize: traditional recipes from Brasov area, which will surely delight your taste buds.
Roast sockets from Brasov
600 g pork meat (loin, leg)
3-4 tablespoons oil
3-4 garlic cloves
salt, pepper, paprika, marjoram
1 cup broth
600 g potatoes
oil for frying the potatoes
Cut the meat in small cubes. Cut the onion and the garlic in slices, and fry them with 4 tablespoons of oil. Add the meat and fry until the meat whitens.
Add salt, pepper (according to your taste), put a teaspoon of paprika and marjoram mixture (cca. ¼ tbsp), pour a cup of soup and cover with a lid, leaving the meat to soften.
Meanwhile, peel the potatoes and cut them into cubes and then fry in hot oil.
When meat is softened, cook until the juice is evaporated and fry a bit more in oil. Pour the potatoes over French fries, mix and sprinkle with chopped green onion stalks or chopped parsley.
You have to serve this dish with pickles.
